I filter my oil often, and change it regularly. Do I still need
to Boil-Out my fryer?
A: Yes, definitely. The nature of the stainless
steel in your fry tank is porous, and it will collect contamination
from burnt on carbon. Even though filtering the fryer’s
cooking oil is effective at removing crumbs and other
loose particulates, it will not remove debris that has already
hardened and become stuck inside the fryer tank. Unfortunately,
as soon as you refill your fryer with new or filtered oil and
heat it back up to cooking temperature the same stuck on carbon
that couldn’t be filtered out will be released by the heat
and CONTAMINATE YOUR FRESH OIL. This is when OIL BREAK DOWN OCCURS.
